If the 11 Pro display is capable of hitting 1200 hits during HDR playback, why would the standard maximum be 800? If it's capable of 1200 nits it's capable to produce that with any content, no? Is this just an artificial limit to protect the display?

Also do we have any idea how Apple is hitting such higher brightness levels compared to Samsung? I know the display technology is very similar because they both use Samsung manufactured panels, but from what I've seen even the XS beats out the S10+ by a large margin in terms of brightness, which means the 11 Pro should destroy it. Seems kind of bizarre considering brightness is a pretty important feature of a mobile display.
 
Maximum brightness for HDR is not meant to be "sustained". It is meant to be peak. I.e. either not full screen or not very long at a time, with possibilities of heavy colour distortions or heat issues if sustained for too long. HDR monitors always have separate maximum brightness for SDR and HDR. HDR content is produced aware of sustainability levels.
