Why is my iPhone 3G "Backing up" always?

Everytime time i connect to itunes to syncs songs etc, its always backing up and it takes forever, is there a way i can stop it from backing up always?

In itunes go to prefs.> Syncing> "Disable auto. Sync. for all Iphones and Ipods"

Well, I don't think you can completely turn it off, but I hear if you are constantly installing apps, it'll take longer to backup. I rarely install new apps and mine goes through the backup process pretty quickly.
