This has happened maybe five times, twice in the last month.

I'm just sitting there reading a web page (in Firefox, btw), and the screen goes grey/gray from the top down and this message appears. This time I took a photo of it, as otherwise the computer is totally unresponsive.

Can only use the power off/on button.

Help!

The only time I have had that problem was when I upgraded the memory in my mac mini, turned out one of the modules was faulty. Took it back to the shop and got it changed, no more problems.

I did upgrade the memory, but that was a few years ago, and seems unconnected to these fairly recent events.

I would say the last time was about ten days ago.
 
Try reseating the memory. Or you may just have a faulty module. If it gets more frequent experiment with taking out one stick at a time to see if you can isolate the faulty one.
Also look in the system log, there may be a diagnostic error in there
