Why is Office such a POS on the Mac?

Why the heck is it screwing up the e-mail formatting?

Screenshot 1: The table looks good.
Screenshot 2: After clicking reply the table gets all messed up.

This doesn't happen in Outlook on Windows! Is there some type of setting that I need to tweak to fix this or is it hopeless?
