There is some differences regarding the cellular bands supported so it can not be excatly the same chip?
Does anyone know if Bluetooth 5.3 is backwards compatible with Bluetooth 4.0?
Dunno if the SiP differs but some internal hardware is different as there are specific model numbers for each region.The cellular radio in the S8 SiP should support multiple bands. It would be wasteful to have a different SiP for different markets.
I doubt it's an error, it's says 5.0 for the European Watch 8 and SE 2022 everywhere on Apple's website and 5.3 for the Ultra.

That would at least make some sense, yes - I am sure they didn't opt to leave out an important feature that comes with the new Airpods Pro 2, on purpose.The other possibility is regulatory approval from the US FCC was granted first to the Ultra and then post-launch was granted to the Series 8 and SE 2022
This is the most likely answer.It could also be regulatory holdups in non-US markets and it will be enabled at a later date.
