You can put a Text Size adjustment button in Control Center so it's fast & easy to change text sizing anytime.

That will change the text size everywhere, the only place I want to change it is in Notes.
 
Are you referring to the subject line in Notes that defaults to larger font size? If so...

Settings > Notes >New Notes > start with "body."
Thank you, I’m not sure why they start with title. Really stupid because whenever you paste something in it makes the entire section of text the large title size.
 
When Notes is set up to use Title size font, it only does that when starting on the first line. If a line is skipped before entering or pasting text, it'll be the regular small body text size

Yes, very stupid design flaw. It should not paste an entire body of text in that large size, no one wants that. How do these glaring oversights make it through?
