I have an Apple Watch Series 6 and an iPhone 11 Pro with which the watch is paired. Automatic updates are activated and the iPhone shows, that an update is available for the watch. But even after I left the Watch on the charger for several days, the update does not get installed.

Is there some sort of magic I have to apply, so that the watch will eventually update?

No magic involved - manual activation to install the update is required - on iPhone go to Watch App - General - Software Update - download update - put watch on charger:)
 
I did this several times, I get a message that the update will be installed when the battery is charged to at least 50% and the watch is on the charger. I put the watch an the charger, wait until the next morning and nothing...

Have you tried forcing the install from the phone with the watch still on the charger?
 
If you don't want to wait for the update to finally install, turn off the automatic update option and perform the update again.

Edited to add: In my opinion, it is not good to set to automatic updates. Sometimes the updates have screwed the devices up and make them hard to use. I always check MR before installing updates. Let other people be the guinea pigs.

I agree, that auto update ist nit the way to go. I activated it because it was always a hassle to install updates on the watch, even on my old S2 and I hoped, that this would solve the problem...
 
I had the same problem with watchOS 7.2, let the watch charge overnight several days in a row with it always claiming the pending update will install on its own but never did. I finally got it to install after performing what (or similar to what) @BenAigen suggested.
 
Thanks again to all of you for your help!

Yesterday I was finally able to update the watch to 7.2. As suggested I turned of auto updates and started the update manually. After the first night a error regarding the update was reported. Than I started the update again, while the watch was fully charged and still on the charger and all went well.

This was one of the worst experiences I had with updates in a long time...
