Someone wants to do a video call with me using Skype. I just now noticed that Skype isn't in Apples App Store. I wonder why that is.

Why isn't Skype in the macOS App Store?

I pay for Teams - but good to know. I stopped using Skype years ago - but, like I said someone wanted to use Skype for our video conference. If I had known you could not install Skype onto a Mac I would have told my acquaintance to use Teams. Teams is installed on my Mac already.
The vast, vast majority of Mac apps are not available through the App Store.
You can install Skype on a Mac, you just need to download it from their own website.

Can't recall if it ever was in App Store for Mac. Guess not as one less hoop for MS to jump through re getting App Store approval.
