Isn't it better to be able to watch the 4K videos in 4K when the users are editing the videos?
 
I know but what about people do their work on the go all the time?
Even if MBPs had a 4k display you won't preview the footage in 4k as the UI of the editing softwares take quite a bit of space on the screen. Plus it takes even more horsepower and energy to run a 4k monitor and a good system has to be balanced to be usable.
As for "Why no 4K screen on MBP when Apple advertises that their MBP can edit 4K videos?", well, my old 2012 MBP could edit 4k easily but it didn't even had a full HD screen.

Because who cares. The pixels are already so small that further refinements in pixel grid will only make a difference under a looking glass.
