Just a thought, if we can customize the fonts, chat balloon colors in iChat on Mac why aren't the same options available in iOS 5? I know it sounds picky but I like the random color option in iChat as well as setting font size. (smaller for me, a bit bigger for my buddies) I'm just sick of the lime green tbh
 
The chat bubble color is not going to change anytime soon.

In iOS 5, Blue Bubble indicates that you are chatting with someone else also using iOS 5 and that the conversation have converted to an iMessage conversation and each text is now free (or using your Data plan and will not count against your texting plan).

Green indicated that your are texting someone either not using iOS 5 or with someone using a different phone, and that each text will counts against your texting plan.

I know this. I just don't understand if I can customize iChat why can't I customize Messages?

I won't be surprised when apps in Cydia will allow for iMessage customization.
 
How long did it take for them to allow wallpapers on the home screen?

Apple isn't keen on allowing customisations; I would try and get used the the current colour scheme until Cydia offers a choice.
