Even before ios5, it has always taken my iPod Touch, iPhone and iPad a long long time to Sync. I have 32gig devices but often have just 1 song I want to add to a playlist or a few new photo's in an album and often I see "waiting for changes to be applied" or "preparing for sync." Sometimes analyzing photo library, then it quickly copy's the 10 photo's and it's done...

any idea what is taking it so long?

In the grand scheme of things it really doesn't take that long at all and as stated its checking to make sure there isn't anything else to copy over.

Say I add just 1 song to my library or a playlist, it takes a while to sync.
Same for a few pictures to a folder... it takes a while for me.
