Wi-Fi sync over the Internet?

If you wanted to sync your iOS device over the Internet, would it work to 1) jailbreak it and trick the device into thinking it is always on Wi-fi, 2) set up VPN, then 3) sync it? Has anyone else tried something different?

I think my real question is how wi-fi sync works. If you set up VPN, then a local hostname should work when accessed by Wi-fi sync. Right?

I believe the wifi sync will only for for a LOCAL wireless network.

I assume it uses Bonjour, not sure how that would work over VPN.
