Is there a way to save wifi settings when doing a restore?

Boss has a few properties and has different wifi names/passwords and every time he gets a new phone he has to enter the password for each property after connecting to it.

Keychain stores Wifi passwords. If you setup the new phone and skip logging into wifi once you've entered the keychain passcode and been verified it should automatically remember the wifi networks you've been logged into. Just replaced my 6 plus because of a broken screen and didn't have to re-enter my office wifi password again. Plus when I was home last month I didn't have to re-enter my home wifi password on new phone.
