I have two 256 gig SSDs using the OSX raid software to run these bad boys as RAID 0. Will a third party raid card give me a considerable difference in load times, etc (yes I am spoiled already).

Probably not enough to justify the price (ultimately, the drives are the limitation). Large cache can improve speed, but it has it's limits, and also depends on what you're doing (it can benefit random access, so I do think you'd see a performance boost) If you needed it to solve a technical issue, then it has it's place.

But the cards that would allow you to do this (if cost isn't an issue), start in the $800USD range, and that's before upgrading the cache.
