Hey all,

On a whim, I decided to make some maple sugar candy. To all you cooks out there, I have to get the maple syrup 28-20 degrees F above boiling. The only problem is, I don't have a candy thermometer. Will a digital probe one be OK?

I dont know if the digital probe you are talking about, such as one that reads temps for doctors and taking your temp at home will work.

i think that the temp would be simply way too high for that kind of thermomitor.
 
You could try it, but I think it'll depend on what the probe is made of. You could buy a candy thermometer for a few bucks or you could try and do it the old fashioned way by testing the candy in water. Drop some of the syrup in a glass of water and see how it sets. There's a good guide I found here. I used to use the water method, but I found it was easier to just get a thermometer.
 
I tried the probe. It worked.

This, my friends, is 71g of pure maple sugar.

Well, like others have said, there's no real recipe. Just take some maple syrup (no, not that cheap crap that's 95% corn syrup, ACTUAL expensive maple syrup), and boil it to 235 degrees F.

Let it cool to about 175 F, then pour into a rubber mold.

It's great. :D
 
I thought the way to make maple syrup candy was to boil the maple syrup, and then pour it onto something really cold, like a wide pan of ice. then it would harden into a chewy-ish candy. am i wrong?

Well the net would be 7 after looking at that concentrated block of sweet maple goodness, but 12 after I filter out the sarcasm ;) It's hard not to splurge after looking at that though; I'm not allowing myself anything with sugar unless it's naturally occuring in unprocessed fruit and/or vegetables.
