Obviously Apple will continue to tweak their new maps for iOS, adding more streets, businesses, cities etc. going forward.

Question - When you are running iOS 6 will the updates to the Maps happen on Apple's end? As in, you don't need to do an OTA update on your phone to access new cities, or newly added information for Maps? You could one day open the Maps apps and see more info, but didn't do any update yourself?
 
Yes. Basically you are worried about map data which is taken care of by Apple backend.

The map is only responsible for how the backend data is used and implemented for you to use it.
 
Maps on iOS doesn't store anything offline, it's always refreshed from the mapping service (Google in iOS 1-5 and Apple in iOS 6+) when you use it.

As such, you'll get the current version of the map at that time.

Bear in mind that most mapping changes move glacially. Changes to junctions and road widening can take as long as 5 years to show up on maps.
