I'm planning on switching to AT&T, but will Apple Online accept Gift Card for my payment for the iPhone? Also, my mother qualifies for a FAN discount. With the July 14, shipping date that is right in time for my contract to be done with through T-Mobile. Can I pre-order an iPhone right now with a single line, and go to At&T the day I receive it to get a family plan, and with the other line just a regular phone?

You can preorder it and when you receive it, you'd have to sign up for a single line and pick your plan pricing and all that.
Once you have set up your line with the iPhone, you can go to an at&t store and tell them you want to add a line and then choose whichever other phone you want.

Yeah, I plan on getting it delivered, when I receive the iPhone I plan to go to At&T first to add the line, and let them activate my iPhone also. I do qualify for a FAN discount, how will this work? Also, do they accept Gift Card payments?

You have to do this online. Once you have your account set up, go to the email they send you and it'll link to your account.
Don't ask people at the at&t store as they usually don't know jack **** or will tell you to do it online.
