I plan on getting the new 15" MBP today or tomorrow depending on availability. I want to upgrade the hard drive but didn't know if they do that in the store. Or do you have to send it in to have this done? Thanks.

I believe you need to purchase it in the configurations that they offer it at the Apple store, which is with the slower drives. (5400 RPM) I had to order mine online to get the 3.06Mhz processor and the faster drive.
 
Upgrade it yourself, you'll pay a fraction of the price and get a better or equally solid drive.
 
in store Apple will upgrade RAM (all models), video card (mac pro) Airport/Bluetooth (mac pro) No Hard Drives
