The Mac mini came with a cable from mini-DVI to DVI. Our local store has a DVI to HDMI cord so I could plug my Mac mini into my TV.

Would this work fine? Or is the whole double cable thing (mini-DVI to DVI, DVI to HDMI) a bad idea as it will cause worse picture quality or something? Would I be better off going mini-displayport to HDMI? (Keep in mind it's like three weeks to get that to ship here, DVI to HDMI is a walk down the street.)
 
It should work fine. The signal is digital from end to end and the mDVI to DVI is just to save space in Mini because full size DVI would be so big (and ugly).
 
I do this with no loss in quality. Conceptually, HDMI and DVI are the exact same signals, except HDMI incorporates extra functionality (audio, DRM, etc.)
 
Like the others said, it will be fine. It's a purely digital signal. You can even find a mini-DVI to HDMI adapter if you want to minimize the number of adapters.
