I just checked the Apple website and for an iPod touch with engraving it says it ships within 24 hours, so maybe the iPad will be the same. I can't imagine that it would be longer than a day or two at the most.
 
I got engraving on my iPad 2 order. I ordered at 0819 on Saturday the 12th and my original ship date was 3-4 days. Checked back later and it has now been pushed back to April 1. Beginning to think the engraving delayed shipping....at least this time around.
 
I had mine engraved with "Xoom Xoom"

I ordered from apple.com the first night of availability, March 11, said 3-5 day shipping time and it has already shipped, it left Alaska today and on it's way to the mainland. Scheduled for Friday delivery. Didn't seem to hold it up any in my case.

Mine's engraved. Ordered first hour it was on sale. It's shipped and is somewhere between China and here at the moment.

So no, there's no extra delay. They're coming off the assembly line as fast as they can be put together, and the engraving is probably set up like a car wash: You can choose the hot wax or not, but your car is still going to go through the same line. The only difference is whether it stops for one second for the engraver to slide over it before it gets boxed.
 
No delay since people who opted for engraving are receiving their iPads while people who wanted a blank one are still waiting for even prepared for shipment. Go ahead and have it engraved if that is what you want. Keep in mind that it will be harder to sell when the iPad 3 comes out. :)
 
Engraving does not delay shipping because Apple contracted to have the FedEx guy engrave your new iPad just before he delivers it.
