will gmail download all my mail?

if I add my gmail account in the Mail app, will it download all my thousands of emails? I've been using the web gmail on Safari but am considering moving over to the Mail app.

no. It depends on how you have you mail app set up. You can have it show 50 like me or set it to 200 which I think is the max.
