What do you think?

Will they enable to remain on 15 (and still update it security-wise on iPhones newer than the 7), or will the security updates be only for the 6s and 7?
 
They'll update iOS15 security-wise for years and years yet. My old iPad was brickwalled at iOS12 and it was still getting updates as of September last year. It won't matter what phone you're using it on.
Yes, but those iOS 12 updates were for devices, that cannot run iOS 13/14/15 ONLY! You could not stay on iOS 12 on an iPhone 7 for example an receive iOS 12.5.5.

I guess they sure will still update iOS 15 security wise but ONLY on iPhone SE 1st, 6s/Plus and 7/Plus. Devices that are supported on iOS 16 (like iPhone X for example) won't receive any iOS 15 updates once 16 is release. That's my guess.
