at this price point with so few changes from last year, I'd be highly surprised if they can't keep up with demand.

Hahaa - NO - the sold-out-within-minutes days are OVER for the Pro-type phones.

However, the 11 Pro Space Gray 64GB will sell out first - but it won't be within minutes.

Certain colors of the regular '11' will sell out within minutes - especially the new purple or green ones, I would bet.

I'm pretty sure there will be plenty of stock available. I can't say for the midnight Green but I hate that color so I'll definitely won't be getting that and will be getting the space gray. Wished they did the Blue one for the Pro Max.

The only way they sell out these, if people somehow confuse them for kitchen stowe while shopping for a new kitchen

I think the days of selling out that fast are over unless there is actually a production issue or the make a mistake in anticipating demand for a certain model (like midnight green). I’m not a conspiracy theorist, but I do believe a lot of the past sellouts was on purpose for marking hype.
