People who tried this and still alive say... GPS says you are traveling hundreds of miles per hour, and the GPS voice urges you to get back on the road because looks like ur going cross-country.

As long as you can get a GPS fix (generally easier by a window), yes. As long as the receiver can get a fix it will determine your location. Data is needed for apps that require data to place your location on a map (or other features that require data).

If GPS didn't work without internet then standalone GPS units without data would be useless.

Yes it will, (though YMMV on interpretation of using a device that is sending/receiving on a plane, I probably wouldn't do it) the main issue is that unless you have maps preloaded on the phone you'll just see the dot in a field of gray since the phone needs to load the map data through an internet connection.
