I bought an imac 3.06 on black Friday. This will be my first mac. Since I did not do my research on when they update, it looks like (according to the buyers guide) that they will update next year.

I mostly used my pc in the past to encode movies with handbrake.

I called to see if I could return it (I opened the box) and they told me I could get store credit but would have to pay the restocking fee (around $200 I assume).

If the imac was to get quad cores early next year would it be worth it in my case to pay the restocking fee?
 
Not if it were my $200. You bought a fine machine, and regardless of what gets released next year (and when), you still bought a fine machine.
 
They're always going to upgrade your machine next year. Quad could come in January, or it could come next December. If you want to play a gamble that you might be without an iMac for another year, then return it. Still, I would recommend against it.
