I have bought some RAM for a project ages ago but never got round to it and I was wondering if the RAM would work in a Mac Pro 1.1 or 2.1

The sticker says

PC2-5300P-555-13-ZZ

and they are 4GB sticks (2RX4)

MP 1,1 and 2,1, as well as 3,1, use FB-DIMM modules. If this link shows the correct images of your RAM modules, then they are registered DDR2 DIMMs and not compatible with any MPs. See here for the differences between FB-DIMM and regular DIMM.
