Depends how well aware CS3 is of multiple cores and if it can split the load evenly. You also have to take into account the faster FSB and RAM.

It'll only be faster if Adobe make an update to utilise SSE4, which given that adobe are so slow to update things won't happen until CS4. So you have nothing to worry about. Also the new Mac Pro's are recognising SSE4 yet.
So your 4x3.0 is still faster at photoshop them my 8x2.8.

I believe you are right. I just took a look at Mike Teezie's times at the speed test sticky thread and he's getting 29 seconds which is about what I get with my actual setup (I got 28 seconds). Maybe he'll shave a second more when he adds more RAM but still not enough to make me change.

I don't do video so the 8 cores are not doing anything for me yet.
