I have an old iBook G4, which I am going to ditch or a brand new Macbook Pro. However I have certain apps (Final cut pro, apperture...) on the iBook and was wondering wether they'd work on the intel chip?

Final Cut Pro and Aperture are Universal Binary, so they should both run on Intel native. If you don't have the universal disks, you can always get the from Apple. I believe you can do a crossgrade for $30 or something.
