Will some software stop working when upgrading to Snow Leopard?

Is it true that some software will stop working when upgrading to snow leopard, unless the developers have issued an SL-compatible update?

As with any OS upgrade, Yes there are always some third party apps that will not work. Many will work without an upgrade but some will not.
It is not usually a deal breaker.
Just clean up your mac, remove any Hacks and Safari addons and have very good backups just in case.
