I am having camera issues with my iPhone 5 and I hope to replace it, But I am having a trip to Hong Kong shortly and won't have time to visit a local Apple store before my trip.

My trip will be 2 months long and so I am wondering, does anyone know will the Apple Store in Hong Kong replace my iPhone 5(assume that the replacement is eligible)? My iPhone is AT&T, paid ETF and officially unlocked. As I know HK sells unlocked iPhone.

No. The Apple TOS states explicitly that warranties are void country to country.

They may elect to replace your device anyway, but that would not be the norm.
