Will the iPhone get all the multi-touch gestures in iOS 5?

Will all the multi-touch gestures in that you see on the iPad in iOS 5 like - 5 finger pinch to minimize app, 4 finger swipe to switch between apps etc. work on the iPhone too?

No, only the iPad 2 will get them. But if you jailbreak they can be enabled.

I don't know about you but I have a hard time pinching with all five fingers on the iPhone screen
