It has been a while since I bought a new Mac, so I'm not sure how Apple does it anymore.
But will there be a separate option to purchase the new Macbook Pros via the educational discount on the release day or will I have to wait until say summer for that? (How it was when I previously bought my air many years ago lol).

Does anyone know how Apple usually role out this option?
 
Yes I believe you SHOULD be able to purchase with educational discount (I just recently purchased the iPad mini 6 with edu discount, though it was not part of the back to school promotion so I didn’t get AirPods etc.)

Usually the summer back to school programs add an extra bonus on top of the discount prices on the laptop/iPad
 
The 8-10% educational discount applies immediately after launch.

Back to School is a better deal as Apple offers free AirPods or another promo item. (You can also choose to have the value of the AirPods $159 knocked off the purchase price through a loophole.)
