I bought mine around 8 days ago, and used the BTS deal for a free iPod. If I tried to return my uMB and buy a new MBP 13", would I have to return the iPod as well? I don't want to have to pay restocking on both.

Bring it in when you return it. I would guess that they'd scan it in as a return first, then "sell" it to you again to offset the price difference.
