I know apple isn't giving us iPad 1 users iOS 6, but will there be an update adding the simple things like iCloud tabs or the updated stores or are we just **** out of luck here?

No. Nothing. iPad 1 is end-of-life as far as Apple is concerned.

Yes. You can turn off multi-tasking.
