Basically what title says, I read that the 256 has noticeably faster read write speed than the 128, in real world usage will be a noticeable difference? I doubt it but basically need some reassurance.

Well, that is universally true for flash storage modules. Unless anything is being done at the software level to regulate it.

A better question is, what task on iOS are you specifically expecting/hoping to be noticeably faster? There are not a lot of everyday tasks that are reading such huge files so as to create a scenario where you'd notice.
 
You might see a slight increase in speed when reading/writing/copying files, but overall, probably not an overwhelmingly apparent increase.

I keep 256GB for devices I'll actually use it on - IE, MacBooks, iPad Pro.

Nothing in particular. I'm not routinely managing huge files or anything. Mostly streaming music and videos, social networking, medical apps, photos, etc. So, the only time you'd really notice a difference is reading and writing very large files?
