Question though, if you replace the HDD... how does the 'drop sensor' work?

Will it only work on Apple HDD's ?

As far as I know, the drop sensor is a feature of the hard drive, not the notebook. So if the new hard drive doesn't have the feature then its not something the computer is going to do for you.
 
It's a feature on the motherboard; when the computer accelerates, it sends a "park heads" command to the hard drive. It might (but I doubt it) have to go through the CPU and OS.
 
I have read on other threads that you specifically don't want a HDD with a 'drop' sensor, as it can mess with the one apple provides on the motherboard.
