I saw somebody who had five windows open and they were all scaled down so you can look at all five at the same time and when you click on one it would go full screen
I am sure it wasnt spaces what is it ? Some key I have to press or?

That is Exposé. You can show all windows and click one like you described, hide all windows, or show only the windows that belong to the active application. You can set what key you want each of the actions to occur in System Preferences under Exposé and Spaces if you are runnning Leopard, forgot were it was in Tiger.
