I have installed Win 10 on mac pro 5,1. Do I always need to select option key to select the windows drive? I tried using start up disk and selected the windows drive. When it restarts it shows no bootable drive. When i select drive using option key it works fine.

If it is installed in legacy mode you can boot it from the start disk, if you install it in UEFI mode you can only boot through the option key. If you install OC(OpenCore) as a boot loader you can use the startup disk again.
