Wipe unlocked iPhone 3G?

Hi all...in prep for getting my new 3G-S, I just sold my 16gb 3G to a friend. I need to wipe it clean but keep it unlocked so the standard iTunes method won't do I suppose. I just want to remove my info and iTunes apps but keep the jailbroken-ness/unlocked situation in tact. Would it work if I re-pwn'd & unlcoked the phone?
