I have a 2015 MBP that I want to wipe and reinstall the OS. I am not sure what OS it came with and do not remember the process for wiping and redownloading the OS, though I do remember the last time I did this I messes something up and it was problematic.

1. What is the easiest way to wipe my drive and reinstall to Catalina?

If you have enough space use Disk Utility to create another volume and install Catalina on it. Then boot into that and migrate or copy any content you want from the existing system. After that you can delete the currently existing volumes to recover the space.
