I recently picked up a 2015 iMac that was running Monterey. The person from whom I got it said he had issues, and could not do Time Machine backups because of an error... something about multiple partitions named Macintosh HD - Data... so I want to completely wipe the drive, format the drive and start over...

I booted into recovery mode (CMD-OPTION-R) and then into Disk Utility... and this is what I see... it looks backwards to me, but want to just blow it all away and start from scratch... how do I do that?

That's normal. But it you want fo blow it all away and start over, follow Apple's instructions.

 
Looking at the pic in post 1 above:

Seems to me you want to click on "Fusion Drive", and then click the "erase" button.

BUT... before you do that... have you gone to the "view" menu and chosen "show all devices"?
