I couldn't resist the $119 refurb 802.11 ac Airport extreme deal @ Bestbuy. When it comes in I'd like to replace one of my previous gen Expresses with my previous gen Extreme since the Extreme is dual band and the Express is not. Question is can you wirelessly extend two Extremes or does this only work between an Extreme and Express?

Yes. An AirPort Extreme can extend any AirPort network.
 
My network consists of an 802.11ac Extreme which has an 802.11n Express and Time Capsule connected to it wirelessly. Obviously only devices connected to the Ectreme get the ac speeds, but the wifi range from it is s vast improvement over my old 802.11n Extreme.
