Okay new to Macs so I must be missing something because this is so easy on my work PC. I have a documents folder with categorized sub folders in documents. You set a default in preferences but when you so a "simple" save as why can't I navigate to a folder embedded under documents? Please don't tell me the solution is to change the preferences every time I want to do a save as.

In the Mac OS X Save As dialog, there's a disclosure triangle pointing downward. Click it, and the dialog expands to reveal, among other functionality, the ability to navigate to any folder.

Yeah, that's not real obvious. The problem is (in Leopard at least) that darn triangle is next to the file name, not the destination folder.
