Is there any word processing application even notepad would do but a run down version of iwork or whatever apple uses(i don't own an apple computer)
 
No. Nothing at all built in.. it's an ipod not a word processor :). Maybe you can persuade google docs to work.

Just seemed like something that would be fairly easy to put it, maybe on an update later on.
 
no, not in current model, probably not in future model from apple, nor from hacks

if those are important function, you might want to consider UMPC or full-featured PDA.
 
Text edit is one thing (and I'm not sure that word work so well).. but word processing? On a touch screen?

Absolutely the wrong device for that.
 
You can add a contact called notes

then under the notes part you can type out stuff and I think it will sync back to your computer and you can reformat it.
