Hello there

I just got an AWU2 and when I opened it, there was some info about a GPS.

It got me thinking. Would the Watch enables to make total abstraction of the phone, while doing a walking workout?

I could put my music on the Watch and leave my phone home.

Would I get the map from the workout and all the data?

Ah? I thought it could keep all the data & transfer when I’m back home. It’s not the case?

You will need a cellular data plan for your watch
Only if you want to be able to make or take calls, messages or see the live map. All Apple Watches since the very first one were able to record outdoor workout maps and power bluetooth headphones.

While you should be able to call the local emergency number even without a cell plan on the watch in most contries, the fancy new automatic crash-/emergency-detection is reliant on a cell plan.

Edit: Yes, the data that was recorded by the watch while the iPhone wasn't in reach is transferred automatically once the connection is re-established.
