At the moment I have iPad 4 128GB wifi model, but looking to replace it with:

iPad Mini Retina 128GB with cellular
or
iPad Air 128GB wifi only.

The benefits I'll get are with travel, using the gps chip and I could pick up a data sim, having the cellular would probably take tasks away from my iPhone as some days I just want to answer email rather than take calls.

Is adding cellular worth losing the screen real estate?

if you're spending THAT MUCH MONEY, why wouldn't you just spend the ext a $100?

Because to some, the size of the mini is much better for them. Why pay $100 more for something you don't want?
But to me, it sounds like the OP isn't looking to downsize so much as he is trying to save money. In that case, if the larger iPad is definitely what you want (OP) then spend the $100 and get it. At that point, it is only $100 more to get exactly what you want.
 
I'm in the UK, pricing is another £100 = $161 USD. I have to have a limit somwehere!

$161 extra for something you're going to be using for a couple years is worth it

OP isn't debating the size but the price, he's settling for the mini because it's cheaper
