Would a maxed out macbook pro 14" do as a 27" imac replacement
would be used for office work, photo editng and some video editng
imac is a old 2012
 
13" is a lot to lose on the screen. Otherwise the laptop will be way faster.
 
Better in every way except for screen size (although that's fixable if you get an external monitor). However, if portability is not a concern I'd wait for the inevitable M-series successor to the 27" iMac, or get a 24" iMac now (even the latter is a pretty big upgrade from a 2012 although you still take a slight hit with screen size).
 
Sorry was meaning to say i would be getting a 27 to 30" to go with it
 
If you get a new monitor to go with it, you'll have a way more powerful machine.

EDIT: I see you're going to get a monitor - then yeah, it will be 100% an enormous upgrade
