I have MBP mid '14 version. Would Mojave or Catalina work just fine on it?

I have a 13 inch mid 2014. Catalina is perfectly fine.

Is Parallels for Mojave compatible with Catalina or do you need to get a newer Parallels?

I actually got Parallels 11 to work on Catalina! (From 2015, El Capitan.) Then I bought parallels 15. But parallels 14 (Mojave) is fully supported on Catalina according to their website.

Mojave will be fine.
Be aware that if you go to Catalina, a lot of stuff you currently have could "break" on you.

My advice:
Mojave.

What are some examples of things that could "break"?

Nothing will break. 32 bit app support has been removed, and for good reason. We have known that since Mojave was released. That is nothing new, and certainly nothing broken!

99% of users do not have any 32 bit apps on their system. You can check in the system information category.

If you open a 32 bit app on Mojave (or even high sierra for that matter) it will give you a warning “this app needs to be updated“ before it opens.

If you haven’t seen that warning, upgrade to Catalina. If you have, delete those apps and upgrade to Catalina

The security in Catalina is significantly better than the previous versions in my opinion.

Does it involve some trick to get 11 to work on Catalina?

I see.

By the way is Parallels the only virtual machine you can use Windows app on Mac background instead of having to go inside a separate window to use the Windows app, or can you do that with Fusion or VirtualBox?

I see.
It's called Coherence mode in Parallels. What is it called in Virtual box? What are ways that Parallels might be better than Virtual box?

Dropping support for legacy 32-bit apps, sidecar for iPad, (soon to come) iCloud folder sharing, new music apps, and much better security with a read only system petition, to name a few.
Be aware that Sidecar does not work with MBP's prior to 2016. It was one of the things I was looking forward to on my late 2015 MBP only to be disappointed.

Not to mention the App Store has removed all of their 32bit apps anyway so unless you go to the developer's site you cant even get them for Mojave.
