Hello,
In my consideration of which retina configuration to buy, I've been told that a retina with an i7 should last longer than one with an i5.

Is this really the case ? From my understanding, if the CPU is struggling with an image related task the GPU will cut the slack, which is why I was going to opt for an i5 with an m295x. Lots of ram should help the longevity as well ? If the i7 helps mainly with hyper threading tasks, yet remains more active and produces more heat, I don't see how that contributes to the longevity of the machine ?

I think the i7 will help you on intensive multi-threaded tasks, and it may not be all that noticeable on typical day to day activities.
 
Unless you spend the days encoding video or otherwise use apps that are multi-core aware (the vast majority are not)... an i7 is not going to make a visible difference. Get as much RAM as you can comfortably afford and the best video card as well.
