My current set up is:

MacBook -> Mini DVI - DVI -> 21" Monitor
Xbox 360 -> 21" Monitor (DVI) + Digital Audio -> Bose Companion II

My problem is every time I want to switch between the two, I need to go behind my monitor and change the DVI cables. Its a pain.

Now the new monitor I'm getting has an HDMI connection. So if I were to buy the HDMI connector for my Xbox 360, could I keep the MacBook hooked up to the monitor through DVI and the 360 through HDMI and get around the whole switching cables process? If so, would one need to be disconnected from this end (MacBook mini display connector taken off) for it to work?

if the monitor has both inputs, you should be able to select from the front panel of the monitor, without unhooking cables.
 
DVI switches (KVM) are expensive and have been reported to cause lag.
